Massaman curry



SERVES 2PREP COOK

pan-fry tofu

8oz

firm tofu, drained and cubed

  1. In a pan over low heat, heat a drizzle of oil and pan-fry firm tofu until golden brown. Season with salt. Set aside.⁣

  1. In a pan, heat 1t of oil and sauté shallots and onion until translucent. Add to cook ginger and garlic until fragrant.

  2. Stir in dried chilies, red chili paste, and spices.

potato, cubed and soaked in water

baby corn

broccoli, blanched

vegetable stock

  1. Stir in and cook potatoes and carrots until part potatoes are translucent and half cooked.

  2. Add vegetable stock and simmer until potatoes are tender.

    dd to cook the rest of the vegetables for 2 mins.

  4. Thicken curry with some coconut milk and season accordingly. ⁣

  1. Serve warm with Basmati rice.
