Stir in and cook potatoes and carrots until part potatoes are translucent and half cooked.
Add vegetable stock and simmer until potatoes are tender.
dd to cook the rest of the vegetables for 2 mins.
Thicken curry with some coconut milk and season accordingly.
Basmati rice, cooked
Serve warm with Basmati rice.
