Tatertot Dish

onion, diced

2packets

Chorizo Crumbles

2tablespoons

all purpose flour

¾cup

vegetable broth

½cup

frozen corn

½cup

frozen peas

salt

black pepper

32ounces

frozen tater tots

1cup

vegan cheddar, shredded

  1. Preheat oven to 350℉.

  2. In a large ovenproof skillet, heat oil over medium. Add onion and saute until softened (6-8

    mins). Add to cook Tofurky ground beef-style until browned (5 mins).

  3. Stir in all purpose flour, then slowly add broth to bring to a boil, stirring constantly until thickened (2 mins).

  4. Take off the heat and stir in frozen corn and frozen peas. Add salt and black pepper to taste.


  5. Top with frozen tater tots. Sprinkle with vegan cheddar. Cover tightly with foil and bake for 30 mins. Uncover and bake until browned (10 mins).
