Sausage and Pepper Hoagie Melt

olive oil, divided

Italian Sausage

green bell pepper, seeded and thinly sliced

1

red bell pepper, seeded and thinly sliced

1medium

onion, thinly sliced

½teaspoon

fine sea salt

½teaspoon

black pepper

vegan provolone cheese

  1. Preheat oven to 400℉.

  2. In a large skillet, heat 1 tablespoon olive oil over medium heat. Add Italian Sausage and cook, turning occasionally, until browned on all sides. Transfer to a plate.


  3. Add remaining olive oil to skillet and add the rest of vegetables, fine sea salt and black pepper. Cook, stirring, until softened (5 mins).

  4. Divide sausages between buns and top with peppers, onion, then vegan provolone cheese.

  5. Place on a baking sheet and bake until cheese is melted (8 mins).
