Preheat oven to 400℉.
On a lightly-floured countertop, roll out vegan puff pastry just enough to smooth out creases.
Spread with Dijon mustard to the edges. Evenly top vegan cheddar, Hickory Smoked Deli Slices, and fresh thyme leaves. Leave a 1” border on one of the short sides.
Roll up vegan puff pastry so the 1” border is the last part being rolled up. Press gently to seal. Cut into ¾” thick rounds and place on baking sheet. Leave a little space between them.
Bake until browned and vegan cheddar is melted (15 mins). Serve immediately.
