Basil Chick’n Avocado Bowls

vegan mayonnaise

green onion, chopped finely

lemon juice

garlic, minced

fresh basil leaves, torn roughly

avocados, halved and pitted

  1. In a medium bowl, combine everything but avocados.

  2. Scoop out some of the avocados flesh, leaving a ½” shell. Add to salad.

  3. To serve, generously fill avocados shells with chick’n salad and garnish with more fresh basil leaves.
