Wicked Easy Mashed Potatoes |

10-12 | large | mashing potatoes, washed, skin on, cut into 1/6’s | ||
1⁄3 | cup | plant-based butter | ||
1⁄3 | cup | unsweetened plant-based milk | ||
2-3 | tablespoon | plant-based butter | ||
fresh ground black pepper, to taste | ||||
salt, to ttaste |
In a large pot, place the mashing potatoes. Cover with sufficient water and allow the mixture to boil on medium-high heat.
Check on the mashing potatoes after 5 minutes. Once the potatoes are fork tender remove from heat, strain and place them once again in the original pot.
Add everything and mash using a potato masher until the mixture is free of lumps and smooth. Enjoy immediately.
