garlic, minced or pressed
firm tofu, drained
walnuts, finely ground
cooked brown lentils
BBQ sauce, (plus additional for topping)
Preheat the oven to 375ºF/190ºC.
In a skillet, heat celery, onion and garlic with a few drops of water until tender for 5 minutes. Remove from heat and allow to cool.
In a large bowl, mash the firm tofu. Stir in the celery mixture along with everything and combine well.
Fold in the mixture into a parchment lined loaf pan. Sprinkle BBQ sauce on top.
Bake until an inserted toothpick in the center comes out clean for 55-60 minutes.
