Oat & Lentil Meat Loaf

celery, chopped

onion, chopped

garlic, minced or pressed

10ounces

firm tofu, drained

¼cup

walnuts, finely ground

½cup

cooked brown lentils

cup

quick-cooking oats

3tablespoons

soy sauce

2tablespoons

BBQ sauce, (plus additional for topping)

1tablespoon

Dijon mustard

2teaspoons

dried parsley

½teaspoon

thyme

½teaspoon

sage

½teaspoon

rosemary

  1. Preheat the oven to 375ºF/190ºC.

  2. In a skillet, heat celery, onion and garlic with a few drops of water until tender for 5 minutes. Remove from heat and allow to cool.

  3. In a large bowl, mash the firm tofu. Stir in the celery mixture along with everything and combine well.

  4. Fold in the mixture into a parchment lined loaf pan. Sprinkle BBQ sauce on top.


  5. Bake until an inserted toothpick in the center comes out clean for 55-60 minutes.
