Oat & Lentil “Meat Loaf"

1stalks

celery, chopped

½

onion, chopped

2cloves

garlic, minced or pressed

10oz

firm tofu, drained and mashed

¼cup

walnuts, finely ground

½cup

brown lentils, cooked

cup

quick-cooking oats

3tablespoons

soy sauce

2tablespoons

BBQ sauce

2tablespoons

Dijon mustard

2teaspoons

dried parsley

½teaspoon

thyme

½teaspoon

sage

½teaspoon

rosemary

  1. Preheat the oven to 375°F/190°C.

  2. In a skillet over high heat, sauté the celery, onion, and garlic with a few drops of water for until tender (5 mins). Remove from heat and cool.

  3. Stir in the cooked mixture and remaining ingredients, and combine well.


  4. Spoon the mixture into a parchment-lined loaf pan. Top with a layer of BBQ sauce.

  5. Bake until until a toothpick inserted in the center comes out clean (~60 mins)
