red lentils, dry

½cup

millet, cooked

1large

red onion, finely chopped

2teaspoons

smoked paprika

2teaspoons

cumin powder

½teaspoon

red chili flakes

2tablespoons

tomato paste

sea salt

black pepper

1medium bunch

parsley, finely chopped

1

spring onion, finely chopped

1tablespoon

olive oil

lettuce

  1. In a pot over medium heat, add lentils to boil with enough water to cover until soft (~17 mins) Add millet and cover, allowing it to absorb the remaining water.


  2. In a separate pan over medium-low heat, sauté the red onion and tomato paste with olive oil until just translucent. Season using with spices, salt and pepper.


  3. Add to mix in with lentils and millet. Allow to cool for 5-10 minutes before folding in the parsley and spring onion.


  4. Form into cigar shaped patties and serve atop a bed of lettuce.
