red lentils, dry
red onion, finely chopped
red chili flakes
parsley, finely chopped
spring onion, finely chopped
In a pot over medium heat, add lentils to boil with enough water to cover until soft (~17 mins) Add millet and cover, allowing it to absorb the remaining water.
In a separate pan over medium-low heat, sauté the red onion and tomato paste with olive oil until just translucent. Season using with spices, salt and pepper.
Add to mix in with lentils and millet. Allow to cool for 5-10 minutes before folding in the parsley and spring onion.
Form into cigar shaped patties and serve atop a bed of lettuce.
