Egg-Free French Toast

1⁄3cup

almond butter

1 1⁄2cup

unsweetened soy milk

1 1⁄2tablespoon

cornstarch

1tablespoon

whole wheat flour

1 1⁄2teaspoon

cinnamon

1teaspoon

vanilla extract

pinch of sea salt

  1. In a blender, process everything until smooth.

  2. Fold the batter into a shallow casserole dish and leave aside.

whole grain bread

vegetable oil spray

  1. Dip the slices of bread into the batter ensuring to coat the slices fully.

  2. In a heated skillet, spray with oil and cook the slices of bread 2-4 at a time depending on the size of the skillet until lightly golden (~2 mins).
