extra-firm tofu, hand broken into bite size pieces
bread crumbs, fine
fresh parsley, finely chopped
black pepper, freshly ground
In a medium sized bowl, add to mix all ingredients, minus vegetable oil and extra-firm tofu.
Completely evenly coat each piece of extra-firm tofu in the seasoned flour.
In a medium-sized cast iron pan (or sauté pan) over medium-high heat, add enough vegetable oil to cover the bottom (~1cm deep).
When the oil is hot, add 6-7 pieces of breaded tofu, pan frying each side until completely golden brown. Remove from oil and place on a paper towel lined plate to dry/remove excess oil.
When ready to serve, bake tofu on a baking sheet for 15 mins in a preheated oven (200°C/400°F). Serve with gravy and all the fixings.
