Gochujang Tofu Noodles

tomato gojuchang sauce

broccoli

ginger, finely chopped

tofu, cubed

red chili, finely diced

tomatoes

gojuchang

scallions, thinly sliced

½cup

cilantro, finely chopped

  1. Cut broccoli into florets. Cut the stem into cubes.

  2. In a pan over medium-high heat, add to sauté ginger and garlic until fragrant (2 mins).

  3. Add broccoli stem, tofu, and red chili to cook until browned (5 mins). Remove tofu and set aside.

  4. Continue cooking by adding tomatoes, gojuchang, and soy sauce for 2 mins.

  5. Add cilantro and scallions.

  1. Cook buckwheat noodles according to package instructions or until cooked.

  1. Add noodles to the tomato gojuchang sauce and combine thoroughly. Divide between two plates and serve!
