Cream Cheese & Mushroom Alfredo

Alfredo sauce

olive oil

onion, finely diced

3cloves

garlic, minced

baby bella mushrooms, finely diced

1cup

dry vegan white wine

1cup

herby vegan soft cheese

  1. In a large pan over medium-high heat, warm olive oil until shimmering. Add onion to cook until soft and translucent. Add garlic to cook until fragrant (2 mins).

  2. Add to cook baby bella mushrooms until most of the moisture has been cooked off. Season with salt.

  3. To flavor the onions, add dry vegan white wine and reduce it until the onions have fully absorbed them.

  4. Add to melt herby vegan soft cheese. Add ½ cup pasta water to create a sauce. If using feta, add vegan cream instead.

spaghetti noodles

  1. In a pot, bring water and salt to a boil. Add spaghetti noodles to cook until it's done.

garnish

black pepper, ground

basil leaves, sliced

  1. Add noodles to the sauce and crack a few black pepper to season. Gently combine to coat the noodles with Alfredo sauce.

  2. Divide between two plates and garnish with basil leaves. Serve.
