Vegan Satay and Peanut Sauce |

1/4 | cup | lemongrass, minced | ||
1/4 | medium | red onion, chopped roughly | ||
4 | cloves | garlic, roughly chopped | ||
1 | tablespoon | chilli powder | ||
1 | tablespoon | ginger, minced | ||
1 | teaspoon | turmeric powder | ||
2 | teaspoons | cumin powder | ||
3 | teaspoons | coriander powder | ||
1/4 | cup | vegetable oil | ||
1/4 | cup | brown sugar | ||
2 | tablespoons | dark soy sauce | ||
3 | tablespoons | light soy sauce | ||
1 | pinch | sea salt | ||

Put everything into a blender, and blend until well combined.

1 1/2 | tablespoon | tamarind paste | ||

1/2 | teaspoon | sea salt | ||
100 | grams | roasted peanuts | ||
1/4 | cup | vegetable oil | ||

Add all ingredients except roasted peanutsand vegetable oil, and blend well.
Once everything is well combined, add in roasted peanuts and pulse until desired consistency. If you want the sauce to be smoother - pulse for longer.
Add the vegetable oil to a pan on medium heat. Then add mixture from step 2.
Cook mixture until the oil separates from the mixture and has a slight red tinge. This will take 5 - 10 minutes.
Add water to your preferred consistency.
Stir for 1-2 minutes, taste and season accordingly.

Save 1 tablespoon of the Satay Marinade for Peanut Sauce.
Add remaining marinade to the diced Original Pieces, and let marinade for at least 30 minutes.
Place pieces of marinated Original Pieces on bamboo skewers.
Brush grill with some vegetable oil on high heat, and grill until charred marks appear.
Serve with peanut sauce.
