Vegan Satay and Peanut Sauce

Satay Marinade

1/4cup

lemongrass, minced

1/4medium

red onion, chopped roughly

4cloves

garlic, roughly chopped

1tablespoon

chilli powder

1tablespoon

ginger, minced

1teaspoon

turmeric powder

2teaspoons

cumin powder

3teaspoons

coriander powder

1/4cup

vegetable oil

1/4cup

brown sugar

2tablespoons

dark soy sauce

3tablespoons

light soy sauce

sea salt

  1. Put everything into a blender, and blend until well combined.

Peanut Sauce

2tablespoons

chili powder

1/2medium

red onion

4cloves

garlic

1 1/2tablespoon

lemongrass, minced

1tablespoon

ginger, minced

1 1/2tablespoon

tamarind paste

1/2cup

brown sugar

1tablespoon

Satay Marinade

1/2teaspoon

sea salt

100grams

roasted peanuts

1/4cup

vegetable oil

  1. Add all ingredients except roasted peanutsand vegetable oil, and blend well.

  2. Once everything is well combined, add in roasted peanuts and pulse until desired consistency. If you want the sauce to be smoother - pulse for longer.

  3. Add the vegetable oil to a pan on medium heat. Then add mixture from step 2.


  4. Cook mixture until the oil separates from the mixture and has a slight red tinge. This will take 5 - 10 minutes.

  5. Add water to your preferred consistency.

  6. Stir for 1-2 minutes, taste and season accordingly.

Satay "Chicken"

16ounces

Original Pieces diced into 1 inch pieces.

Satay Marinade

  1. Save 1 tablespoon of the Satay Marinade for Peanut Sauce.

  2. Add remaining marinade to the diced Original Pieces, and let marinade for at least 30 minutes.

  3. Place pieces of marinated Original Pieces on bamboo skewers.

  4. Brush grill with some vegetable oil on high heat, and grill until charred marks appear.

  5. Serve with peanut sauce.
