salt

  1. In a roasting pan, sprinkle a layer of salt.

  2. Place carrots on pan and cover them with salt. They should be completely buried in salt.

  3. Roast in oven at 425°F for 90m.

  4. Let it cool. Peel into slices.

marinade

coconut vinegar

3tablespoons

olive oil

1teaspoon

liquid smoke

1teaspoon

smoked paprika

  1. In a bowl or glass jar, add all marinade ingredients.

  2. Add roasted carrot slices to marinade at room temperature for 1 day.

  3. On the next day, place in the refrigerator for 2 more days.
