Sweet Pickled Daikon

daikon, sliced

2 teaspoons

salt

1/3cup

black vinegar

1/3cup

sugar or coconut sugar

  1. Slice daikon, thinly.

  2. Add salt to daikon, massage it gently and let sit 1 hour.

  3. Drain and rinse daikon

  4. Add black vinegar and sugar to daikon, mix gently.

  5. let sit 1 day before serving
