Peach Ice Cream |

1 | cup | sugar or coconut sugar or maple syrup | ||
3 | cups | water | ||
2 | cups | raw cashews | ||
5 | peaches, pitted | |||
2 | teaspoons | vanilla extract |
Make a simple syrup with the sweetener and water by bringing to a boil to dissolve the sugars. Options: Add cinnamon stick, allspice berries, clove, or fresh ginger to flavor the syrup and the ice cream. Let cool before going to step 2.
In a high speed blender, add simple syrup, cashews and peaches and puree till totally smooth.
Place the mix in your ice cream machine until the custard sets.
Eat right away or place in freezer.
