Peach broth for ramen |

1 | large sheet kombu | |||
4 | dried shitake | |||
20 | peach pits | |||
2 | peaches, halved | |||
2 | quarts | water | ||
3 | green onions | |||
1 | daikon | |||
4 | teaspoons | salt |
Add all broth ingredients to a pot.
Place on very low heat, cover and bring to simmer, slowly.
When simmering begins, remove from heat and strain.
Add very high quality salt, to taste. Chill!!
