Peach broth for ramen

large sheet kombu

4

dried shitake

20

peach pits

2

peaches, halved

2quarts

water

3

green onions

1

daikon

4teaspoons

salt

  1. Add all broth ingredients to a pot.

  2. Place on very low heat, cover and bring to simmer, slowly.

  3. When simmering begins, remove from heat and strain.

  4. Add very high quality salt, to taste. Chill!!
