  1. Place everything in a pot. Over low heat, bring to simmer, covered. Remove from heat and let sit half hour. Strain.

root vegetables, (potato, yam, taro, sweet potato, carrot), chopped

  1. In a soup pot, add vegetable stock, coconut milk, kombu, garlic, okra, habanero, fresh thyme, and allspice. Bring to a simmer, uncovered.

  2. Add to cook root vegetables and pigeon peas until cooked (~10 mins).

  3. Add choy sum. Remove from heat.

  4. Add soy sauce and stir well. Season with white pepper and salt if needed.
