Green Papaya Salad |

1 | medium | green papaya, peeled, de-seeded, and shredded | ||
1 | carrot, shredded | |||
4 | Chinese long beans, cut into 1" pieces | |||
2 | cloves | garlic, minced |
Combine all the vegetables and mix well.
1-6 | red Thai chillies, minced | |||
2 | teaspoons | ginger, grated | ||
2 | tablespoons | coconut sugar | ||
2 | tablespoons | soy sauce | ||
2 | tablespoons | lime juice | ||
1 | tablespoon | tamarind extract | ||
1 | teaspoon | fermented bean curd |
In a bowl, combine all ingredients.
Pour dressing over salad ingredients.

1 | tomato, cut into 8 pieces | |||
¼ | cup | peanuts, toasted and chopped |
Add garnish and gently mix well.
Taste and adjust seasonings: palm sugar for sweetness, soy sauce for saltiness, and lime for tart. Serve immediately.
