Green Papaya Salad

Salad

1medium

green papaya, peeled, de-seeded, and shredded

carrot, shredded

Chinese long beans, cut into 1" pieces

garlic, minced

  1. Combine all the vegetables and mix well. 


Dressing

red Thai chillies, minced

2teaspoons

ginger, grated

2tablespoons

coconut sugar

2tablespoons

soy sauce

2tablespoons

lime juice

1tablespoon

tamarind extract

1teaspoon

fermented bean curd

  1. In a bowl, combine all ingredients.

  2. Pour dressing over salad ingredients.

Garnish

3tablespoons

cilantro, chopped

tomato, cut into 8 pieces

¼cup

peanuts, toasted and chopped

  1. Add garnish and gently mix well.

  2. Taste and adjust seasonings: palm sugar for sweetness, soy sauce for saltiness, and lime for tart. Serve immediately.
