Dry Fried Green Beans

Dry Fried Green Beans

1pound

green beans, trimmed, washed

5cloves

garlic, minced

2teaspoons

ginger, minced or grated

2teaspoons

chili garlic paste or dobanjiang

2teaspoons

diced pickled radish or pickled mustard green (optional)

1tablespoon

light soy sauce

1teaspoon

dark soy sauce

1/2teaspoon

coconut sugar

stock or water as needed

2tablespoons

cooking oil

  1. in a hot wok, add cooking oil and green beans and stir fry over very high heat for 3 minutes. Add stock or water as needed to prevent beans from sticking and burning. Beans should get nicely blistered! Remove beans from wok and set aside

  2. Add 1 teaspoon of oil to the wok and add garlic, ginger, chili paste, pickled radish and stir fry 30 seconds. Add beans back to the wok and add light and dark soy sauce and coconut sugar and stir fry another 10 seconds.
