Dry Fried Green Beans |

1 | pound | green beans, trimmed, washed | ||
5 | cloves | garlic, minced | ||
2 | teaspoons | ginger, minced or grated | ||
2 | teaspoons | chili garlic paste or dobanjiang | ||
2 | teaspoons | diced pickled radish or pickled mustard green (optional) | ||
1 | tablespoon | light soy sauce | ||
1 | teaspoon | dark soy sauce | ||
1/2 | teaspoon | coconut sugar | ||
stock or water as needed | ||||
2 | tablespoons | cooking oil |
in a hot wok, add cooking oil and green beans and stir fry over very high heat for 3 minutes. Add stock or water as needed to prevent beans from sticking and burning. Beans should get nicely blistered! Remove beans from wok and set aside
Add 1 teaspoon of oil to the wok and add garlic, ginger, chili paste, pickled radish and stir fry 30 seconds. Add beans back to the wok and add light and dark soy sauce and coconut sugar and stir fry another 10 seconds.
