Gingerbread muesli with Oatgurt and figs

gingerbread muesli

400ml

oat flakes

100g

walnuts, coarsely chopped

100g

raisins

1pinch

vanilla powder

150ml

coconut chips

3teaspoons

linseed

3tablespoons

maple syrup

3tablespoons

coconut oil

1teaspoon

cloves, ground

1teaspoon

ginger, ground

1teaspoon

cinnamon, ground

1teaspoon

cardamom, ground

½teaspoon

salt

  1. Preheat the oven to 200°C.

  2. In a bowl, mix all ingredients except for the fruits and coconut chips.


  3. In a saucepan, melt coconut oil

    over low heat. Pour coconut oil and maple syrup over dry ingredients and mix well.

  4. On a baking tray with parchment paper, spread mixture and roast in oven for 20mins. Stir regularly to ensure that mixture doesn't burn.

  5. Remove tray and allow muesli to cool. Add raisins and coconut chips. Mix thoroughly and store in airtight container.
