Gingerbread muesli with Oatgurt and figs |

400 | ml | oat flakes | ||
100 | g | walnuts, coarsely chopped | ||
100 | g | raisins | ||
1 | pinch | vanilla powder | ||
150 | ml | coconut chips | ||
3 | teaspoons | linseed | ||
3 | tablespoons | maple syrup | ||
3 | tablespoons | coconut oil | ||
1 | teaspoon | cloves, ground | ||
1 | teaspoon | ginger, ground | ||
1 | teaspoon | cinnamon, ground | ||
1 | teaspoon | cardamom, ground | ||
½ | teaspoon | salt |
Preheat the oven to 200°C.
In a bowl, mix all ingredients except for the fruits and coconut chips.
In a saucepan, melt coconut oil
over low heat. Pour coconut oil and maple syrup over dry ingredients and mix well.
On a baking tray with parchment paper, spread mixture and roast in oven for 20mins. Stir regularly to ensure that mixture doesn't burn.
Remove tray and allow muesli to cool. Add raisins and coconut chips. Mix thoroughly and store in airtight container.
