Tom Kha Phak Hack with Quinoa |

3 | carrots, sliced | |||
3.5 | oz | soft tofu, roughly cut | ||
2 | rainbow chard, roughly chopped | |||
1 | tomato, quartered |
In a pot, bring everything but rainbow chard to a boil.
Add rainbow chard and stir until softened.
1 | cup | red quinoa | ||
2 | cups | water |
In a pot, water and red quinoa to a boil. Turn down to simmer with the lid on until it has absorbed the all the water (~15 mins). Fluff with fork.
To serve, add quinoa to a plate and pour tom kha phak on top.
