rainbow chard, roughly chopped
In a pot, bring everything but rainbow chard to a boil.
Add rainbow chard and stir until softened.
In a pot, water and red quinoa to a boil. Turn down to simmer with the lid on until it has absorbed the all the water (~15 mins). Fluff with fork.
To serve, add quinoa to a plate and pour tom kha phak on top.
