Cucumber tofu salad

sesame oil

soy sauce

3tablespoons

water

1tablespoon

Mirin

  1. Combine all ingredients.

Fresno chili, sliced

¼cup

roasted peanuts, roughly chopped

1tablespoon

cilantro, roughly chopped

¼block

firm tofu, crumbled

½medium

cucumber, ribboned

  1. On a plate, create a bed of firm tofu. This will allow the firm tofu to absorb the dressing while sitting at the bottom. Leave some as topping.

  2. Add cucumber. Sprinkle with the rest of the ingredients.

  1. Drizzle sesame soy dressing over salad.
