Caesar Salad

Caesar dressing

soft tofu

olive oil

1tablespoon

fresh lemon juice

1teaspoon

Dijon mustard

3teaspoons

nutritional yeast

salt

black pepper, ground

  1. In a blender, add everything to blend. Season with salt and black pepper to taste.

popped capers

¼cup

brined capers, drained

1tablespoon

avocado oil

  1. In a pan over medium high heat, warm avocado oil until shimmering.

  2. Add capers without overcrowding. Cook until popped and golden brown.

lettuce

gem lettuce

  1. Separate gem lettuce from core.

  1. In a bowl, toss to coat lettuce with coat Caesar dressing.

  2. Add popped capers and lightly toss to distribute.
