Braised Beans & Greens |

1 | lb | Cannellini beans, soaked for 10 hours, drained, rinsed | ||
1 | bunch | kale, chopped | ||
3 | tablespoons | avocado oil | ||
6 | cloves | garlic | ||
2 | white onions, chopped | |||
7 | cups | water | ||
2 | bay leaves | |||
1 | teaspoon | salt | ||
black pepper, freshly ground |
In a large pot, heat avocado oil over medium heat until shimmering.
Add white onions to cook until tender and clear (6 mins). Add garlic and stir constantly (2 mins).
Add Cannellini beans, water, and bay leaves and bring to a boil. Reduce heat to low. Cover and simmer until Cannellini beans are soft (45 mins).
Remove bay leaves. Add kale and salt to taste.
Cover and simmer until kale is melting soft (30 mins). Add black pepper to taste.
