Braised Beans & Greens

Cannellini beans, soaked for 10 hours, drained, rinsed

1bunch

kale, chopped

3tablespoons

avocado oil

6cloves

garlic

white onions, chopped

7cups

water

bay leaves

1teaspoon

salt

black pepper, freshly ground

  1. In a large pot, heat avocado oil over medium heat until shimmering.

  2. Add white onions to cook until tender and clear (6 mins). Add garlic and stir constantly (2 mins).

  3. Add Cannellini beans, water, and bay leaves and bring to a boil. Reduce heat to low. Cover and simmer until Cannellini beans are soft (45 mins).


  4. Remove bay leaves. Add kale and salt to taste.


  5. Cover and simmer until kale is melting soft (30 mins). Add black pepper to taste.
