Broccoli, Wild Rocket, and Radish Minestrone

200g

radish, thinly sliced

800g

broccoli, chopped into thumb-sized

1litre

vegetable stock

1clove

garlic, finely diced

1

medium onion, finely diced

100g

wild rocket

1teaspoon

mustard powder

200g

pasta

2tablespoons

olive oil

  1. In a pan, heat olive oil over medium heat. Add garlic and medium onion until soft (~4 min).

  2. Add to cook mustard powder and broccoli for 1 min.

  3. Tip in radish and cook for 1 min. Pour vegetable stock, cover pan and bring to boil. Reduce heat to simmer.

  4. Tip pasta and cook for 15 mins with lid off until broccoli is soft.

  5. Remove pan from heat and stir in wild rocket until wilted. Serve.
