Niçoise Socca

1cup

chickpea flour

1cup

lukewarm water

¾teaspoon

sea salt

teaspoon

ground cumin

2.5tablespoons

extra virgin olive oil

  1. Mix all ingredients and 1.5T olive oil.

  2. Oil a 10" pan with the remaining olive oil. Heat an oven-safe pan in a 450° oven until oil is very runny and hot. Alternatively, heat over medium high on the stove.

  3. Remove pan from oven and pour a thin layer of batter to cover the bottom of the pan. Swirl it around and place back into the oven.

  4. Bake until socca is fluffy and crispy at the edges. Bake longer if you prefer a crispier version.

freshly-ground black pepper

  1. Season with as much freshly-ground black pepper as you'd like.
