If your bread is not stale yet, lay it out on a baking sheet overnight to dry, or bake it for 10-20 minutes in a 300°F oven until stiff and dry. Using stale or dried bread will help it soak up the custard, while avoiding soggy French toast.
In a shallow dish, whisk everything.

Soak French loaf slices in custard, flipping halfway through for 15-30 mins.
In a non-stick skillet over medium-low heat, brush with a light coat of coconut oil. Cook each slice of French loaf onto the pan until browned, letting any excess custard drip into the dish.
