In a 1.5 quart saucepan over medium heat, bring water, European Style Cultured Vegan Butter, salt, and ¼t ground cinnamon to a rolling boil. Reduce to low.
Add all-purpose flour and stir vigorously until mix forms a ball. Remove from heat and let rest for ~6 mins.
Stir to combine 4T of eggs at a time. Set aside.
Prepare to pipe churros to fry. In a medium skillet over medium-high heat, heat vegetable oil. Spoon dough into piping bag with a star tip.
Pipe 1" strip of dough into hot oil to fry until golden. Cut with knife. Repeat until bites fill saucepan with room to fry. Remove with slotted spoon / mesh spider strainer. Drain on paper towel.
In a medium bowl, mix sugar and ½t ground cinnamon. Toss churros in to coat. Serve with favorite dipping sauce.
