pumpkin, peeled, de-seeded and cubed

Preheat your oven to 180°C. In a roasting tray, place the pumpkin, cajun spice mix, dried sage, seasonings and olive oil. Combine using your hands.
In an oven, roast the pumpkin until tender (~50 mins).
onions, peeled and roughly chopped
garlic, peeled and roughly chopped
vegetable stock, more if required
In a large saucepan over medium heat, place a drop of olive oil, onions, and garlic and saute with a pinch of salt (4 mins).
Add pumpkin, Oat Drink, and vegetable stock to the saucepan. Simmer for 10 mins.
Blend until super smooth a few ladles at a time. Add more vegetable stock if too thick.

Season soup and serve with garnishes.
