Cajun Pumpkin Soup by Gaz Oakley

roasted pumpkin

1medium

pumpkin, peeled, de-seeded and cubed

3tablespoons

cajun spice mix

1tablespoon

dried sage

2teaspoons

sea salt

1teaspoon

black pepper, cracked

  1. Preheat your oven to 180°C. In a roasting tray, place the pumpkin, cajun spice mix, dried sage, seasonings and olive oil. Combine using your hands.

  2. In an oven, roast the pumpkin until tender (~50 mins).

onions, peeled and roughly chopped

garlic, peeled and roughly chopped

Oat Drink

3cups

vegetable stock, more if required

  1. In a large saucepan over medium heat, place a drop of olive oil, onions, and garlic and saute with a pinch of salt (4 mins).

  2. Add pumpkin, Oat Drink, and vegetable stock to the saucepan. Simmer for 10 mins.

  3. Blend until super smooth a few ladles at a time. Add more vegetable stock if too thick.

  1. Season soup and serve with garnishes.
