Banana Bread by Martha Stewart

very ripe bananas, mashed

2tablespoons

ground flaxseed

2cups

unbleached all-purpose flour

1teaspoon

baking soda

¾cup

sugar

¼teaspoon

kosher salt

½cup

coconut oil

cup

unsweetened almond milk

1teaspoon

pure vanilla extract

  1. Preheat oven to 350°. Oil and flour a 9-by-5-inch loaf pan.

  2. Prepare ground flaxseed by mixing into ⅓ cup of water until thickened (5 mins).

  3. In a large bowl, whisk the dry ingredients. Stir in the wet ingredients.

  4. Bake in the oiled loaf pan until a toothpick inserted in center comes out clean (~1 hr). Let cool on a wire rack for 15m.
