very ripe bananas, mashed
unbleached all-purpose flour
unsweetened almond milk
pure vanilla extract
Preheat oven to 350°. Oil and flour a 9-by-5-inch loaf pan.
Prepare ground flaxseed by mixing into ⅓ cup of water until thickened (5 mins).
In a large bowl, whisk the dry ingredients. Stir in the wet ingredients.
Bake in the oiled loaf pan until a toothpick inserted in center comes out clean (~1 hr). Let cool on a wire rack for 15m.
