Cucumber Salad |

avocado oil |
Infuse avocado oil with star anise, Sichuan peppercorns, dried chili peppers, cinnamon stick. Strain.
1 | red chili pepper, chopped | |||
2 | teaspoons | red chili powder | ||
4 | cloves | garlic, minced | ||
1 | teaspoon | sesame seeds | ||
2 | tablespoons | soy sauce | ||
1 | teaspoon | sesame oil | ||
4 | tablespoons | vinegar | ||
1 | teaspoon | salt | ||
1 | teaspoon | sugar |
In a bowl, mix all ingredients with infused oil.
1 | cucumber, halved |
To flatten cucumber, smash with a cleaver. Scoop out seeds and set aside. Chop cucumber into sections. Add 1t salt.
Mix dressing, cucumber seeds, and cucumber together. Serve!
