New York Style Cheesecake |

Preheat the oven to 350°F.
Combine all ingredients in a
food processor and process until crumbly. Then press into the
bottom of a 8 or 9 inch springform pan lined with parchment.

¼ | cup | organic cornstarch | ||
¼ | cup | maple syrup | ||
1 | tablespoon | agar powder | ||
1 | tablespoon | vanilla extract | ||
2 | teaspoons | lemon zest |
Place all ingredients in a food processor and process
until smooth and creamy (~1 min). Alternatively,
place all but the last three ingredients in a large bowl and
use an electric mixer or a wooden spoon to mix well.
Add agar powder, vanilla extract,
and lemon zest, and mix well.
Pour cheesecake mixture onto the prepared cheesecake crust. Bake for about 50 minutes, until lightly browned on top.
Let cool completely, then place in the refrigerator
for several hours or overnight before serving.
Enjoy plain, or top with your favorite seasonal berries and a light sprinkle of powered sugar.
